PRECIS VODKA PASTA
Ingredients
- 1 lbs (450gr) Penne or Rigatoni
- 2 tablespoons olive oil
- 2 shallots, finely chopped
- 3 cloves of garlic, finely chopped
- 1/2 tea spoon chili flakes
- 1 tube (7 oz/2dl) tomato puree
- 5 oz (1.5dl) Precis Vodka
- 10 oz (3dl) full cream
- 1 table spoon white balsamic vinegar
- 1 table spoon white balsamic vinegar
- 5 oz (1.5dl) pasta water
- 1/4 lbs. (100gr) parmesan, finely grated.
- salt and freshly grounded black peppe
How to make
- Heat the olive oil and sauté the onions, garlic and chili flakes for 2-3 minutes until the garlic smell nice. Blend in the tomato puree and sauté slowly for 10 minutes until it is thoroughly caramelized, darked roasted and has started to separate.
- Increase the heat, add the Precis Vodka and let it cook in completely. Pour in the cream and balsamic vinegar and stir until it is a thick, even sauce.
- Remove the pan from the stove and set aside until the pasta is ready to be turned over.
- Boil the pasta until it is almost ready, perhaps a couple of minutes before it is ‘al dente’ and save some pasta water before you pour it away. Mix in the pasta into the Vodka sauce together with finely grated parmesan. Dilute with pasta water while stirring until the pasta has finished cocking. Finish the taste with salt and pepper.
